Mini Pepper Egg Bites
- 12 mini sweet peppers, halved & deseeded
- 6 large eggs
- 1/4 cup milk (or plant milk)
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp chopped chives (optional)
- Salt & pepper
- Heat oven to 375°F (190°C). Line a sheet pan.
- Whisk eggs, milk, salt & pepper. Stir in cheese and chives.
- Arrange pepper halves cut-side up; spoon egg mixture into each.
- Bake 12–15 min until just set. Cool slightly and serve warm.
